Sweet & Sour Chicken

Absolutely beautiful! I've never had anything as good as this recipe from the Chinese takeaways!

Preparation time: 10 mins
Cooking time: 25 mins

Serves: 4


2 chicken breasts (cubed)
Green bell pepper (sliced)
Onion (sliced)
3 carrots (sliced)

1 can (400g/14.5 ounce) pineapple chunks
180ml white sugar
80ml white rice wine or cider vinegar
160ml water
60ml cup soy sauce
1 can (400g/14.5 ounce) chopped tomatoes
2 tbs cornflour


Mix all the ingredients for the sauce in a large bowl and set aside

Fry chicken in a little oil for 5 mins

Add green pepper, onion and carrots and fry for a further 5 mins

Add the sauce mixture and simmer for 15 mins until the sauce has thickened

Serve with rice
