2 chicken breasts (cubed)
2/3 packets ready to cook seafood (mussels, prawns, shrimps, calamari, etc)
Red bell pepper (chopped)
Onion (chopped)
1 can (400g/14.5 ounce) chopped tomatoes
250g frozen peas
400ml Arborio (risotto) rice
Pinch saffron strands
2 tsp paprika
750ml chicken stock


Sprinkle chicken with 1 tsp paprika and fry in a little oil for 5 mins

Add red pepper and onion and fry for further 5 mins

Add chicken stock, rice, saffron, remaining paprika, chopped tomatoes and season with salt and pepper

Simmer for 15 mins then add seafood and frozen peas

Simmer for another 5 mins until chicken stock has been absorbed by the rice (if rice is not cooked, add more water)
