1 can (400g/14.5 ounce) chickpeas
Onion (chopped)
1 tbs parsley (chopped)
1 tsp cumin
1 tsp dried chilli flakes (optional)
150ml - 250ml break crumbs
1 egg (beaten)
Oil for deep frying


Add chickpeas, onion, herbs and spices to a food blender. Blend slightly so the mixture becomes course (ensure the mixture does not become smooth)

Combine mixture with the egg in a bowl and mix well

Add bread crumbs until mixture becomes firm enough to form into patties in your hand

Form mixture into patties the size of a golf ball then flatten slightly

Heat 4 cm of oil in a pan and fry the patties in batches of 8 at a time (adjust depending on size of pan - allow plently of space, don't overcrowd). Fry on each side until golden (approx 3/4 mins each side) then drain on paper towels. Repeat until all patties are cooked

Serve in pita bread with cucumber, lettuce and yoghurt, or in sandwiches with hummus spread and salad
