Spinach Steak and Mushroom Salad

A great summer meal idea. Simple but filling. Quick to make.

Cooking time: 15-20

Serves: 4


1 lb strip loin grilling steak, 1 inch thick
1/2 tsp each salt and pepper
1 tbsp veg oil

2 cups mushrooms
1 clove minced garlic
1 tsp dried thyme
1 tbsp veg oil

1 bag baby spinach

1/4 cup light mayonnaise
2 tbsp milk
2 tbsp horseradish
salt and pepper to taste


Combine mayonnaise, milk, horseradish, salt and pepper, set aside.

Season steak with salt and pepper. Cook in grill pan over medium high heat 8-10 minutes, until medium rare. Transfer to board and tent with foil, let stand for 10 minutes. Thinly slice across grain.

Heat oil over medium high heat, sautee mushrooms, garlic, thyme, salt and pepper. Sautee 5 minutes, or until mushrooms are golden.

Divide spinach among plates. Top with steak and mushrooms, drizzle dressing on top.

**** Original recipe called for thin slices of red onion to go on top as well. I omittedit due to Andy's allergies.
