3 butterfly (or whatever) pork chops
4 skinned and quartered apples
A bottle of Screech
A bunch of brown sugar
Two pinches of rosemary
A half a can of apple juice
A stick of cinnamon
Put brown sugar on a plate and mix in well with rosemary. Ensure all pork chops are well covered with sugar. Put a pan on the stove and heat. Toss the pork chops on until well braised. Get out a good baking tray and place pork chops on tray. Put into oven on bake for approx. 45 minutes at 350 degrees.
Turn down temperature on stove and add apples. Add in a pinch of rosemary and the cinnamon stick ( you can use a touch of powdered cinnamon if you want...or a touch of nutmeg...depends on how you enjoy the flavour). Add in some more brown sugar and then cover with the apple juice. Add however much screech you are comfortable with. Let it simmer and crush the apples. Let all the juices mix together and then you'll have an awesome apple sauce.
Serve it with a salad as it is a very heavy meal. A good strong red wine is suggested (I served it with great effect using a South African rosee called "The Ruins"). A simple vanilla ice cream makes a good desert with the leftover juices and apple sauce.
