Chinese Chicken & Cashew

Ingredients

2 chicken breasts (sliced diagonally)
Green bell pepper (cut into 2x3 cm strips)
Onion (cut into 8 wedges)
1 can (200g) bamboo shoots
100g cashew nuts
2 cm fresh ginger (grated)

Sauce:
2 tbs soy sauce
3 tbs chicken stock
2 tbs rice wine vinegar or cooking sherry
2 tbs water
2 tsp cornflour

Method

Combine ingredients for the sauce in a bowl and set aside

Fry chicken in a little oil for 5 mins

Add onion and green pepper and fry for a further 5 mins

Add sauce mixture, ginger, bamboo shoots and cashew nuts and simmer for 5 mins (until the sauce has thickened slightly)

Serve with rice or noodles
