4 cupts of spelt flour
4 teaspoons wantham gum
1 teaspoon salt
2 tablespoons sugar
5 tablespoons butter (or margarine)
1 cut lukewarm water
3 eggs (large or extra-large)
2 envolpes quick-rising yeast
In a bowl, mix together all the dry ingredients except the yeast.
Put water, eggs and butter in the bread machine.
Pour the dry ingredients on top of the wet ingredients and sprinkle the yeast.
Set the bread machine on "dough only" and let it work its magic (2 hours).
Before you go on to do other things, butter a pan and sprinkle flour on a working surface.
When the bread maching bips, gently get the dough out, knead on the working surface, separate in 3 section and braid them.
Trasfer the loaf onto the buttered pan, cover and let rise for 1 hour.
Set the oven at 375F. And bake for 35-45 minutes.
