1 mango
1 small red onion
1 avocado (ripe but still firm)
2 limes
1 pinch salt
1 pinch ground dried chipotle
chop mango into bite size hunks
chop onion into thing half rounds
combine onions and mango with juice from 1 lime, salt, and chipotle.
dice avocado, and cover with the juice from 1 lime (to avoid oxidation/ugly brown avocados)
fold the avocado into the mango mixtrue, being carefule to preserve the healthy shape of the avocado segments (that sounds creepy).
if you are not vegan, you can also add some fresh goat cheese - it's a nice foil to the chipotle.
