1 cup whole wheat flour
1 cup all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp cinnamon
1 tsp ground ginger
1/4 tsp ground nutmeg
1 pinch salt
1 cup molasses
1/2 cup brown sugar
1 cup canned pumpkin
1 egg
1/2 cup yogurt (I used vanilla-flavored to make things more interesting)
1/4 cup canola oil
Preheat oven to 350. Lightly grease a 9 x 5 inch loaf pan.
Combine flours, baking powder, soda, spices and salt. In another mixing bowl whisk together the molasses, brown sugar, pumpkin, egg, yogurt and oil.
Add the wet ingredients to the dry and stir just to combine. Pour batter into baking pan and bake for 50 to 55 minutes. Let bread cool in pan for 15 minutes before turning bread out onto rack to cool completely.
