Slow roasted cabbage rolls

Serves: 6-8


1 large head cabbage (wrap in plastic bags, freeze, then thaw overnight, peel off first two outer leaves - chop off hard core on bottom and they peel amazingly easy-no tearing i promise)
1 pound each med.ground beef, ground pork and ground veal.
2 cups cooked rice (i use brown)
1 large onion finely chopped
lotsa garlic (up to you how much) finely chopped
sauce- 1 large can diced romas/1 large can crushed tomatoes/good squeeze 1/2 lemon/2 tbsp brown sugar mixed up well.


peel & rinse cabbage leaves...set aside.
mix meat, rice, onion, garlic, s&p together...
place handful at bottom of each leaf (near hardest part) and roll up like a burritto tucking sides in...
Pour some sauce into bottom of roaster (an inch) and start placing cabbage rolls in seam side down- tightly, can layer - you'll have alot of them.
Pour remaing sauce over cabbage rolls. Cover and bake at 375 degrees x 1 hour - then decrease heat to 325 degrees x 2 hours, until you are so hungry from the aroma you can't stand it any longer!!
Great with mashed potatoes/perogies.......
Sometimes for extra flavour i'll squeeze in some chicken drumsticks on top!
