World-Famous Cappuccino Chocolate Chip Muffins

Introduced to these in Uganda, took the recipe back to the US, have now made them in Taiwan and China as well. Always a hit for coffee/chocolate lovers.:D

Preparation time: 15 min.
Cooking time: 15-20 min.

Serves: 12 muffins

Dietary guidance: v 


2 cups flour
3/4 cup sugar
2 teaspoons baking powder
2 teaspoons instant coffee granules (you can add more for stronger coffee flavor, or extra caffeine!)
1/2 teaspoon salt
1/2 teaspoon ground cinnamon (add more to taste)
1 cup milk
1/2 cup butter, melted and cooled
1 egg, lightly beaten
1 teaspoon vanilla extract (add more to taste)
3/4 cup semi-sweet chocolate chips (add more if you want!)


Preheat oven to 375 (190C) degrees. Grease 12 four ounce or 6 eight ounce muffin tins. In a large bowl, stir together flour, sugar, baking powder, coffee powder*, salt, and cinnamon. In another medium bowl, stir together milk, butter, egg, and vanilla until blended. Make a well in center of dry ingredients, add milk mixture and stir just to combine. Stir in chips. Spoon batter into prepared muffin tins and bake 15-20 minutes or until top springs back when touched. Turn out muffins onto wire rack. Enjoy!!!

*With some coffee granules, I have found it best to mix with 1-2 tbsp. of hot water first. Some seem to dissolve fine in the mix, others sometimes need a little help from the hot water to dissolve properly.
