Lemon Bars

2/3 cup flour
3 tbsp. sugar
1/4 cup margarine. (block margarine... not table spread)
1 egg
1 egg white
1/2 cup + 2 tbsp. sugar
2 tbsp. flour
1 tbsp. finely shredded lemon zest
2 tbsp. lemon juice
1 tbsp water
1 tsp. baking powder
1 tbsp. icing sugar


1. Spray an 8 x 8 in. pan with cooking spray. set pan aside.

2. In a small mixing bowl combine 2/3 cup flour, 3 tbsp. sugar. Cut in margairine until crumbly. Pat mixture onto the bottom tof the prepared pan. Bake at 350 for 10 - 15 min. until just lightly browned.

3. Meanwhile, in the same bowl combine, egg, egg white. Beat with an electric mixer on medium speed until frothy. Add sugar, flour, lemon zest, lemon juice, water and baking powder. Beat on medium speed for three minutes or until slightly thickened. Pour mixture over baked layer in pan. Bake for 20 - 25 minutes more or until edges are light brown and center is set. Cool pan on a wire rack.

4. Sift icing sugar over top. Cut into bars.
Store in refrigerator. 16 bars
