Coffee Pork Ribs

150g to 200g Pork Ribs or belly pork
3 Tbsp Maple Syrup
2 Tbsp light soy sauce
1 tbsp sugar
Corn oil for deep frying
Cornflour for coating pork ribs
1.5 tsp instant coffee
Ground white pepper (small quantity)
Toasted sesame (optional)


1. Add 2 Tbsp of Light Soy sauce and 2 Tbsp of Maple Syrup.
2. Add Pork ribs pieces to marinate.
3. Add ground white pepper to taste.
4. Mix well and marinate for at least 3 hours


1. Heat Corn oil.
2. Remove pork ribs pieces from marinate. Reserve marinate for preparation of coffee sauce
2. Coat pork rib pieces with cornflour & deep fry them until golden.
3. Drain and set aside

Coffee Sauce
1. Use half of marinate. Dilute with 2 Tbsp of water
2. Mix in instant coffee. Stir to dissolve instant coffee
3. Pour the marinate into a pan and bring to a boil.
4. Add 1 Tbsp of Maple syrup and 1 heaped tsp of Sugar
5. Allow the liquid to boil down and thicken.
6. Place pork ribs back into the pan to coat the sauce.
7. Sprinkle some toasted sesame.
8. Serve hot.
