125g chorizo chopped
1 onion chopped
2 stalks celery chopped
2 cloves garlic choped
1 tin cooked chic peas
2 tins chopped tomatoes
1 litre stock (chicken or veg) and pinch sugar
125 g baby spinach
place chorizo in saucepan with a little oil and crisp for 2 mins, add onion and celery and cloves of garlic, lower heat until soft and clear.
Add chick peas,tomatoes,stock and sugar,simmer for 5 to 10 mins
add spinach and cook for further 5 mins
serve with crusty bread
