Dietary guidance: v
1/4 cup margarine/butter (softened)
3/4 cup sugar
1 cup mashed bananas (2-3 bananas)
2 eggs, beaten
2 cups flour (1 cup white & 1 cup whole wheat works well too)
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/2 cup sour milk or buttermilk (to make sour milk, just add 1/2 TBSP lemon juice to milk and let sit for 5 minutes)
Chocolate chips (optional)
In bowl, cream together margarine and sugar. Beat in bananas. Add eggs and beat well. Stir together flour, baking powder, soda and salt. Add to creamed mixture alternately with sour milk, stirring well after each addition.
Pour batter into greased loaf pan and bake at 350 degrees for 50-60 minutes.
To make muffins, pour batter into greased muffin tins, filling 2/3 full. Bake at 375 degrees for 18-20 minutes. (I often use mini muffin tins as everyone seems to love them and they are just the right size for young kids.)
