Black Bean & Avocado Salad

Easy to make, so healthy, fresh and tasty. Makes an excellent lunch or appetizer or snack. My all around favorite thing to eat.

Ingredients

2 14 oz. can black beans (or 1 28 oz)
1/2 red onion, chopped
1/2 bag frozen corn (or small bag)
2 fresh tomatoes, chopped
2 avocados, sliced into bite sized cubes
fresh cilantro to taste
juice of a lemon or lime
2-3 Tbls. olive oil
1 tsp. cumin
salt to taste

Method

Combine all ingredients above except for the tomatoes and avocados. Just before serving, chop and add the tomatoes and avocados and toss gently. Serve with tortilla chips.

The amount of ingredients listed are really just suggestions. The whole salsa can be made completely to taste with no measuring at all.

I've also used this recipe as the filling for baked or fried quesadillas. Yum!
