2 cups of elbow macaroni
1 tbsp of flour
1 1/2 tbsp of butter
1 cup of milk
2 cups of cheddar cheese grated.
1 tsp yellow mustard or dry mustard.
1 tsp of paprika.
pinch of sugar.
salt and pepper to taste.
in a large pot bring lightly salted water to a boil.
add elbow macaroni and give it a stir.
in a medium low saucepan make a rue with the flour and butter making sure that as you mix to get out all lumps.
when your flour and butter are well mixed add milk and make sure that rue and milk are well combined.
add grated cheese and once cheese is melted reduce temp to low.
add mustard and paprika, sugar and stir.
add salt and pepper to taste.
cheese sauce is ready when it has thickened and will "plop" off the spoon and not run.
once macaroni is cooked strain and return to pot.
add cheese sauce to noodles and stir together well.
you can serve as is or you can bake this in the oven at 350 degrees in a glass casserole dish with coarse breadcrumbs added to the top. cook for about 10-15 minutes.
you can also add veggies like broccoli or green beans or meat if so inclined.
