Cheesy Brocolli and Rice

Brocolli, cheese and rice are baked with a layer of bread crumbs for bubbly taste explosion.

Serves: 6


1 cup rice
2 cups water
1 tbsp butter
1 tsp salt
1 can cream of broccolli condensed soup
1 cup milk
1\2 stick velveeta, cubed (processed cheese)
1 bunch brocolli, chopped
1 celery stalk, chopped
1 can drained mushrooms (optional)
3\4 cup bread crumbs


Place brocolli and celery in a microwave safe bowl with 1\2 cup water
microwave on high 5 minutes, drain

To make the sauce:
-add soup to a large pan on low-med heat
-add 1 cup milk
-add velveeta cheese stirring to melt in
-add brocolli and celery, stir to incorporate

To make the rice:
-bring a 2 cups water to boil
add 1 tbsp butter, 1 tsp salt and rice
-cover and simmer on low 25 minutes or until all liquid is absorbed

Mix sauce with rice and place in a large casserole dish. Top with bread crumbs.

Cook in a preheated 350 degree oven 30 minutes or until golden brown and bubbly.
