Chocolate Wacky Cake

Just about as easy to use as a cake mix! This recipe is great for those who have egg/dairy/nut allergies (with the exception of the icing recipe). The texture is dense and works great when cake decorating.

3 cups flour
6 TBSP cocoa
2 cups sugar
1 tsp baking soda
1 tsp salt
1 cup oil
2 tsp vanilla
2 tsp vinegar
2 cups water

1/2 cup margarine/butter (softened)
4 cups icing sugar(If you want chocolate icing use about 3 1/2 - 4 cups icing sugar plus about 1/4 cup cocoa to taste/consistency you like)
2 tsp vanilla


Dump all the ingredients into a large mixing bowl and cream together for a few minutes! Can't get much easier then that!!!

A few options for baking that I've used:
* Greased 9x13" pan
* Two or three 8" round pans (make sure to grease & flour for easier release of cakes)
* Muffin baking pan (greased or paper cup lined)

For cakes, bake at 350 degrees for 30 minutes. For cupcakes, bake at 375 degrees for approx. 15 minutes.

To make icing, just cream the icing ingredients together until smooth. Ice cooled cake/cupcakes.
