Simple meatloaf

Very basic no-frills meatloaf that even a picky toddler will eat

Preparation time: 10
Cooking time: 65 mins

Serves: 6


500g minced beef
1/2 cup breadcrumbs
1 egg
1 small onion, finely chopped
1 glove garlic, finely chopped
salt and pepper
olive oil


Preheat oven to 200 deg C
Mix all ingredients except oil. Form into a fat sausage. Roll in olive oil. Put into a baking dish and bake for about 65 min. Serve with steamed vegies or salad.

Stephanie (Alexander) does this with bacon, baked bananas and potatoes (she adds them after 45mins, then bakes for a further 30 mins, 10 minutes longer than my version).
