1/4 cup low-sodium soy sauce or tamari
2 tablespoons mirin OR white wine OR rice wine vinegar
3 tablespoons white vinegar
1 tablespoon minced peeled fresh gingerroot
2 minced garlic cloves
2 tablespoons honey
4 fresh fish fillets (tilapia, halibut, salmon)
sliced mushrooms
sliced carrots
rice for serving
Tip for cooking with ginger and garlic: buy them in jars, already minced, to make preparation quicker
Mix all dressing ingredients in a small bowl
Place fish in a glass pan, then place mushrooms and carrots around fish. Pour on teriyaki sauce. Bake at 350F for 30 minutes. Serve over rice.
If you like your carrots and mushrooms soft, cook them in a pan with a small amount of oil for 5 minutes or so before adding them to the fish.
