Mexican Corn Pie

Perfect for any Mexican dinner, this is probably the best version of this recipe I've ever had!

Cooking time: 1 hr

Serves: 10


1 cup butter, softened
1 cup sugar
4 eggs
1 (4oz) can chopped green chilies
1-2 jalapeno peppers, diced finely (depending on how spicy you like it)
1 (16 oz) can cream-style corn
1/2 cup shredded Monterey Jack cheese
1/2 cup shredded Cheddar cheese
1 cup flour
1 cup cornmeal
4 tsp baking powder
1/4 tsp salt.


Preheat the oven to 350 degrees F. Cream butter and sugar until light and fluffy. Beat in eggs one at a time. Add chilies, pepper, corn, and cheeses; mix well. Stir in flour, cornmeal, baking powder and salt; mix well. Spoon into greased 8'x12' baking dish. Reduce oven temperature to 300 degrees F and bake for one hour.
