Pastelon Variant (plaintain and egg dish)

A variation on a Puerto Rican Pastelon... sweet plantains and meat layered with goodies

Serves: 4


1.25 lbs ground beef/turkey/whatever
6-8 eggs; separated
2 cups cooked chopped broccoli
3-5 ripe plantains
handful of olives
one small onion
3 cloves garlic
seasonings (anything you like in your ground beef)


begin by sweating and/or caramelizing chopped onions and garlic in a very small amount of oil in a mid-size saucepan. while this is caramelizing, begin peeling and slicing plantains on the bias about 1/4 inch thick. Add ground meat product to onions and season as you like. Throw in olives (you may chop these if you like, or omit). over med-low heat, put oil in frying pan and fry plantains till golden brown and mushy (yes, mushy). remove from oil. light whisk egg whites till foamy and scramble egg yolks. In pie pan, layer some of the egg whites then place some plantains along the bottom of pan. then layer it all, cooked broccoli, meat, more eggs, more plantains. When you run out, cover all with egg yolks and bake in 350 degree oven for 5 minutes or until eggs are golden. you can add cheese if you like or use green beans instead of broccoli... etc.
