Dietary guidance: v v
1 large onion, sliced
1 large tomato, diced
2 jalapeno peppers, diced finely
1/4 cup lemon juice
1/2 cup fresh cilantro
Place onion slices in sieve and run under cold water for five minutes while squeezing. Its okay if the onions break. Drain all the water out. Stir all of the ingredients together and chill for 30 minutes to an hour. Serve with corn chips.
(I never really measure my ingredients so this is a guess-estimate. I always use one huge onion and then do the rest by sight. The tomatos and jalapeno should be plentiful but its the amount of lime juice and the cilantro that make the dish. The juice should be enough to really cover the vegetables and seep into them while the cilantro should almost look like big chunks that take up most of the bowl.)
