Preparation time: 20 minutes
Cooking time: 20 - 30 minutes
6 oz. elbow pasta, boiled in salted water until tender
2 - 4 oz. blue cheese
2 oz. mozzarella cheese
1/2 cup half and half
6 pieces of bacon, cooked and broken apart
1 large yellow onion, caramelized in bacon fat (6 - 8 minutes)
2 oz. mozzarella cheese, shredded
Preheat oven to 350 degrees.
Cook the bacon, then caramelize the onions in the bacon fat for about 6 - 8 minutes, or until they become translucent.
Mix everything together in a casserole dish and bake for 20 - 30 minutes at 350 degrees.
Remove from the oven and sprinkle remaining cheese on top. Bake for an additional 5 - 10 minutes, just to melt the cheese. Serves 5 - 6 people.
