Zucchini cake

3 large eggs
2 c sugar
1 c oil
2 c grated zucchini
2 t vanilla
1 c chopped walnuts
1 c raisins
3 c flour
1 t salt
1 t baking soda
1/4 t baking powder
3 t cinnamon


Preheat oven to 350°F or 175°C.
Combine dry ingredients.
Beat eggs, stir in sugar, oil, and vanilla. Beat for a minute or two. Add zucchini, stir well. Add dry ingredients, mix well. Add nuts and raisins Pour into 2 greased loaf pans and bake for about 50 minutes ( fan) or an hour.Remove from oven, cool for 10 minutes, take out of the pan.Can be frozen.
