Black Beans and Rice

This is such a great addition to beef or chicken fajitas.

Ingredients

1 tsp oil
1 onion, chopped
2 cloves garlic, minced (I've also substituted garlic powder)
3/4 cup uncooked white rice
1 1/2 cups vegetable or chicken broth (I just add 1 1/2 tsp boullion powder to 1 1/2 cups boiling water. At times I've skipped the boullion powder and just added plain water)
1 tsp ground cumin
1/4 tsp cayene pepper
3 1/2 cups canned black beans, drained

Method

In a pot over medium-high heat, heat the oil. Add the onion and garlic and saute for 4 minutes. Add the rice and saute for 2 minutes. Add the broth (or water if you choose to skip the boullion powder). Bring to a boil, cover and lower the heat and cook for 20 minutes. Add the spices and black beans.

This is a great addition to fajita fillings. Gives it some added kick!
