Pumpkin Muffins

A perfect choice for small amounts of leftover pumpkin pureé, these muffins are dense but moist with a subtle pumpkin flavour. Add pecans or raisins for extra flair.

3/4 c. firmly packed brown sugar
1/2 c. butter or margarine
1/4 c. molasses
1 egg, beaten
1 c. pumpkin pureé
1 3/4 c. flour
1 tsp. baking soda
1/4 tsp. salt
1/2 c. pecans or raisins (optional)


Combine sugar, butter and molasses and beat well. Add egg and pumpkin and beat until smooth. Stir together remaining ingredients (batter may be lumpy).

Lightly grease muffin tin and fill each cup about half full with batter. Optional: Place a whole pecan nut on the top of each muffin for decoration. Bake at 350°F (177°C) for 20 mins. or until a toothpick tester comes out clean when inserted into muffin center.
