Chicken Parmesan

Breaded Chicken with penne and authentic (easy) tomato sauce topped with monteray jack!

Preparation time: 5 minutes
Cooking time: 20-25 minutes



2-3 Chicken breasts
3 tbsp flour
1-2 cups bread crumbs
1\2 cup grated\shredded parmesan
2 beaten eggs
2 cups Stewed tomato sauce (see my recipe) or canned variety
Penne or desired pasta


To make the chicken:
-pat chicken dry with paper towels
-add a thin layer flour to coat lightly
-combine bread crumbs and parmesan thoroughly
-dredge the chicken in eggs then in bread crumbs
-Place chicken in a preheated "George Foreman grill" 6 minutes until done or pan fry 3 minutes on each side until done

Meanwhile heat the sauce in a small sauce pan
-immediately add 1\2 cup heated tomato sauce atop chicken once ready
-then place 1 slice of monterey atop chicken while still hot until wilted and has begun to melt

Bring a large pot of water to boil
-add 1 tbsp salt
-add desired pasta
-cook 7-8 minutes
-add stewed tomato sauce or canned variety and mix thorougly

Serve pasta with chicken on side or on top making sure cheese has melted slightly.
