Aunty Betty's Date & Walnut Loaf

This is an old family recipe. Aunty Betty used to make it for my dad whenever she visited, but my sisters and I would steal big, fat slices. Tastes better the older it gets - fantastic covered in butter!

6oz plain flour
large pinch of salt
4oz chopped dates
1 rounded teaspoon bicarbonate soda
6 tablespoons boiling water
2oz butter & marg
2 teaspoons vanilla essence
4oz sugar
2 eggs
2oz chopped walnuts


Grease 1lbs loaf tin, sift flour with salt on to paper.
Put chopped dates in bowl, sprinkle with bicarbonate of soda, pour boiling water over them leave them to cool.
Cream together the fat, vanilla essence and sugar.
Separate egg yolks from whites and beat yolks into the sugar mixture.
Blend in sifted flour, dates and water and chopped walnuts
Whisk egg whites until stiff and then fold into the mixture.
Turn into prepared tin and bake in moderate oven (375 degrees) for 1 - 1 1/4 hours
Turn out and cool on wire rack.
