150g ginger nut biscuits
50g melted butter
1 dragon fruit
100g white chocolate
juice of half a lime
1 sachet of gelatin
200g cream cheese
100g greek yogurt
1 and a half tablespoons of caster sugar
1.- crush biscuits in a bag with a rolling pin. melt butter in a pan then add the biscuit crumbs and stir over a medium heat for 2mins.
2.- place the crumb mixture in bottom of a 9inch loose bottom tin, lightly press the mixture down to form the base.
3.- peel and mash the dragon fruit. dissolve gelatin in hot water according to the packet instructions. gently melt chocolate in a bowl over a pan of hot water (a ban-marie) add gelatin and stir well.
4.- in a large bowl whisk the cream cheese with sugar then whisk in the yogurt and mashed dragon fruit followed by the chocolate mixture.
5.- pour the mixture into the tin, smooth the top and place in the fridge to set for a few hours.
Serve with raspberries and a few slices of dragon fruit.
