Onion Jam

Easy, homemade onion jam. Delicious with steaks and as relish in burgers. Also good with Indo Mee. ;Od

3 large onion (sweet, Spanish is best)
2 tbsp sugar (brown/white)
1/4 cup water
2 tbsp vinegar (either balsamic/sherry/white wine/red wine)
1/4 cup water


1. Clean and slice onions into 1/4 inch thick rings.

2, Coat a large skillet or pot (with cover) with cooking spray or a small quantity of oil.

3. Over medium heat, cook the onions until soft and translucent (approx. 15 mins). Keep covered. Stir occasionally.

4. Add sugar and cover. Cook until onions look deep golden (approx. 20~30 mins). Stir occasionally.

5. Add 1/4 cup water and scrape up all brown bits with a wooden spoon. Cover and cook until onions are dark brown (approx. 20~30 mins). Stir occasionally.

6. Add vinegar of choice and another 1/4 cup water. Continue cooking until liquid has been absorbed.

7. Transfer into a clean bowl to cool, uncovered. Store in an airtight container in the fridge up to 1 week.
