Matthew's Sinfully Easy Tex-Mex Dip

A delicious tex-mex style dip that is so easy it is embarrassing! Try at least once . . . You'll love it.

Preparation time: 5 - 10 Min.
Cooking time: About 20 Min. +/-

Serves: Serves 8 - 12 (or more) as Horderve

2 - 8 ounce pkgs. Cream Cheese
1 - 10 ounce can original Ro-Tel
1 - Can Black Beans (drained and rinsed)
2 Cups Grated Cheese (Cheddar, Colby, Monterrey Jack, Smoked Cheddar)


Preheat oven to 350 degrees.

Allow Cream Cheese to come to room temperature or microwave until soft. Place in mixing bowl. Pour juice of Ro-Tel into Cream Cheese and blend well until combined. Spread Cream Cheese mixture in bottom of a baking dish (about a 9" X 13"). Sprinkle drained and rinsed Black Beans over Cream Cheese mixture and then sprinkle Ro-Tel pieces over Black beans. Cover with foil and bake in oven about 15 minutes until hot and starts to bubble around edges. Uncover and top with Grated Cheese and return to oven until cheese melts.

Serve with Corn Chips or your favorite dippers!
