Ginger Cream Cookies

A fairly standard ginger cookie with vanilla buttercream... but much easier to make than the old-fashioned recipes for something similar!

Ingredients

1/2 c. sugar
1/3 c. shortening
1 egg
1/2 c. treacle
1/2 c. water
2 c. flour
1 t. ground ginger
1/2 t. salt
1/2 t. bicarbonate of soda
1/2 t. ground nutmeg
1/2 t. ground cloves
1/2 t. ground cinnamon

Frosting:
1/4 c. margarine, softened
2 c. icing sugar
1 T. milk
1 t. vanilla

Method

Mix sugar, shortening, egg, treacle and water. Stir in remaining ingredients. Cover, refrigerate 1 hour.

Heat oven to 400. Drop dough by teaspoonsful onto ungreased cookie sheet. Bake until almost no indentation remains when touched, about 8 min. Immediately remove. Cool; frost.

To make frosting: mix margarine and icing sugar. Beat in milk and vanilla.
