Moroccan Lentil Stew

1/4 small onion
1/2 tomato
1/2c fresh broccoli
1/2 small potato
1 clove garlic (minced)
1/2 tsp cumin
1/4 tsp cayenne pepper
3 tbs dried lentils, red and green
1/2 tbs olive oil


Place lentils in a small sauce pan with water to cover and bring to a boil. Reduce heat, and simmer until tender, about 20-25 minutes. Chop onion, tomato, broccoli and potato; mince garlic and set aside. In a non-stick sauce pan, heat olive oil on medium heat and sauté onion and garlic for about 2 minutes. Add tomato and sauté for about 3-4 minutes. Sprinkle cumin and cayenne over tomato mixture and sauté for another minute. Combine cooked lentils, their cooking liquid, potatoes and broccoli with tomato mixture. Cook, stirring frequently, until potatoes and broccoli are tender, about 15-18 minutes. If mixture seems too dry, add some water or broth. Serve with flat bread and eat right away
