Pastirami Dried Beans

Serves: 6


Dried beans - 400 gr
2 Onions
2 garlic cloves
3-4 green peppers
4-5 tomatoes
1.5-2 spoons of tomato paste
7-8 slices of Turkish pastirami
2-3 spoons of Olive oil, salt, boiled water


Wash and boil the dried beans in a pan once and remove that water.
Soak dried beans in refreshed water overnight (water a bit more than double the beans).
After at least 8 hours or so, put the beans in a pan and boil in water remained on low heat until beans become soft.
In another sauce pan, saute the tiny chopped onions and garlic in pre-heated olive oil until they're pink-ish.
Add sliced green peppers, keep stiring with the tomatoe puree added up.
Few minutes later add the chopped tomates first and then boiled water followed by the boiled dried beans. Water level should be 1-2 cm above the beans.
After a while it starts boiling, add the sliced pastirami pieces and salt. Keep cooking for another 25-30 minutes on very low heat.
Tastes better if it sits for another 3-4 hours after removed from the heat. And goes great with pickles!
