Moroccan Beef and Barley

1 tsp olive oil
12 oz leen boneless beef round steak
28 oz can diced tomatoes
1 1/2 cups water
1 small onion, sliced and separated into rings
1/2 cup uncooked barley
1 tsp sugar
1 tsp ground cumin
1 tsp ground ginger
1 tsp minced garlic
1/2 tsp ground turmeric
1/2 tsp paprika
1/2 tsp ground cinnamon
1/4 tsp salt
10 oz package frozen mixed vegetables


1. Coat bottom of large pot with olive oil.

2. Slice meat into 1/2 inch cubes. Brown meat over medium heat ~ 5 minutes, stirring often.

3. Add remaining ingredients, minus the frozen vegetables. Bring to a boil over high heat. Cover, reduce heat, and simmer for 1 hour.

4. Add the frozen vegetables. Cover and simmer an additional 30 minutes until meat, barley, and vegetables are tender and liquid is absorbed. Stir before serving.
