1 1/2 cup fresh or frozen peas
2 garlic cloves, chopped
3 slices of bacon, uncooked
3 1/2 cups chicken broth
1 oz. fresh spinach, shredded
1/3 cup lettuce, shredded
2 tsp. chopped mint
1/2-1 tsp. chopped parsley
pinch of salt and pepper
Dump all ingredients in slow-cooker. Set on HIGH for 3 hours.
When soup is finished cooking, transfer to a food processor or blender and process until smooth. (Make sure you read your appliance's instructions for processing hot liquids, and follow accordingly!)
Serve hot.
