Pie crust

2 1/2 cups flour
tiny pinch salt
1 cup vegetable shortening (or 1/2 cup shortening & 1/2 cup butter)
1 egg yolk
juice of 1/2 lemon
cold water


1. Stir flour and salt together in large bowl. Cut shortening into flour with pastry blender or knife, until mixture ressembles bread crumbs.

2. Stir egg yolk and lemon juice together in a measuring cup. Add enough water to make a total of 1/2 cup liquid.

3. Add liquid ingredients to flour mixture ll at once, and mix just until dough holds together. Divide in half and roll each half out to fit 8" - 9" pie pan.

Makes enough pastry for one double-crust pie.
