Dietary guidance: v v
450 g fresh vegetables (pea pods, carrots, spinach, tomatoes, broccoli, cauliflower, lettuce...)
Hot peanut sauce (see my recipe)
Chop the vegetables to make a salad. If you wish you may stir fry the firm vegetables (such as pea pods, carrots and broccoli) until they are hot, then mix everything together.
Make a thin peanut sauce and pour it over the vegetables. Toss lightly and serve immediately.
