250 gms carrot peeled
1 cup safflower oil
1 cup brown sugar
3 eggs
1 1/2 cups SR flour
1 tspn bicarb soda
2 tspn cinnamon
3/4 cup walnuts
Grate carrots
Combine oil, sugar& eggs into a bowl and mix well.
Add flour, soda and cinnamon.
Add chopped walnuts & carrots.
Put into a well greased 20cm square tin.
Bake in moderate over for 45 minutes.
