Curried Shrimp Pasta Salad

Serves: 6-8


small shrimp
roasted red peppers
canned corn
artichoke hearts (optional)
sesame seeds
any small pasta- 1 llb
julienned ginger, 1 tsp ground ginger, 1/2 tsp ground cumin, 1/2 tsp salt and pepper, 2 garlic cloved minced, 1tblsp extra virgin olive oil, 1 tbsp sesame oil, curry powder


1. marinate shrimp in oil and dry ingredeint for 15-20 min
2. cook shrimp and marinade
3. add shrimp to pasta along with roasted red peppers, corn and artichoke hearts ( I don't list amounts because it's really up to whatever you like)
4. toss together with curry powder and salt, pepper to taste
5. garnish with sesame seeds
