Bran Muffins

2 Eggs
1tsp Vanilla Essence
2 cups milk
1 cup brown sugar
1/2 cup oil
2 1/2 cups nutty wheat flour (south africans)
(Aussie folk please use multi grain)
1/2 tsp salt
2 1/2 tsp bi-carb
2 cups bran


Mix wet and dry ingredients together
Bake in muffin pan for approx 15 min at 375 deg C

Chopped nuts can be added if so desired

Mixed dough can be stored in air tight container in
fridge for 2 weeks.
