Preparation time: 20 minutes
Cooking time: 3 minutes
1 lb black tiger shrimp
1 chilpotle in adobo sauce - chopped
3 tbl of cilantro chopped coarsely
Juice of 2 oranges
2 tbl grapeseed or canola oil
Salt to taste
In a large non-reactive bowl combine the chopped chilpotle, cilantro, orange juice, oil and salt.
Toss in the shrimp and let it sit for 15 minutes.
Heat a cast iron skillet to medium hot. Toss in the shrimp (throw out the rest of the marinade) and cook for 1 1/2 minutes then flip and cook another 1 1/2 minutes.
