Hamburger Soup

Ingredients

1 lbs ground beef
1 medium yellow onion, diced
1 28oz can diced tomatoes
1 can tomato paste (garlic & herb flavouring optional)
1 can tomato soup
1 ltr fat free beef broth (low salt, optional)
2 garlic cloves, crushed
2 tsp dried parsley
1 tsp dried thyme
1 bay leaf
3 large carrots, diced
2 celery stalks, sliced thin
salt and pepper to taste
Favorite wholewheat pasta (macaroni, bowtie, etc.)

Method

Brown hamburger and onion until no longer pink, drain
Add all other ingredients (except pasta)
Stir and Bring to a boil, then simmer for at least 2 hours

When soup is nearly done simmering, cook pasta separately according to instructions. Drain.

When serving: spoon pasta into individual soup bowls. Ladle in soup over pasta and serve. This keeps the pasta fresh and not over saturated.
