Mom's Chicken Noodle Stirfry

My mom's own concoction which the whole family has loved. One of my husband's top picks!

Serves: 4-6


1 onion, minced
1/8-1/2 tsp fresh ginger, minced (I often use a pinch of ginger powder instead)
2 cloves garlic, minced (I often use a pinch or two of garlic powder instead)
1 1/2 cups celery, finely chopped
1/3 cup green pepper, finely chopped
1 bag steam fried noodles (see details below)
2 chicken breasts, cubed
1 1/2 TBSP chicken boullion powder
1 1/2 TBSP soya sauce
salt & pepper (a pinch or two of each)
1 TBSP sugar
3/4 cup water


Prepare ingredients. In large pot, saute onion, ginger, garlic, celery and green pepper. Add chicken and cook until chicken starts turning white. Add chicken boullion, soya sauce, water, salt, pepper and sugar and stir. Cover and simmer for 5 minutes. Stir in noodles. Pour into large casserole dish and bake covered at 200 degrees for 1 hour.
