Damson Chutney

3 1/2 lbs damsons
2 large onions
1 clove of garlic
1/2 lb raisans
1/4 lb dates
1 1/2 lb brown sugar
2 1/2 pints malt vinegar (MUST be malt)
1/2 oz salt
1 oz ground ginger
1/4 level teaspoon ground allspice


Wash the fruit, chop the ions, crush and chop the garlic, chope the raisans and dates. Mix all the ingredients in a large pan and simmer for 1 1/2 to 2 hours very slowly until the desired consistency is reached.

Remove as many of damson stones as possible.

Pour in to hot jars and cover immediately.

If damsons are pre-stoned before cooking add another 1/2 lb of damsons.
