Cheese Biscuits

Basic cheese biscuits that you can't go wrong with.

6 oz plain flour
4 oz butter
2 oz grated cheese
salt and pepper to taste
a little milk for mixing


Rub the fat in to the flour, add the cheese, which must be finely grated, salt and pepper. Mix to a stiff paste with cold milk. Roll dough to about 1/8 inch in thickness. Cut in to rounds of about the size of a small tumber or shot glass, prick with a fork to prevent rising and bake in a hot oven for 7-10 minutes.

The biscuits should be a light golden brown colour.

Don't leave the oven with these. They can cook VERY quickly.
