450g Blackberries (washed)
450g granulated sugar
Juice of 1 lemon
350ml Jar (please sterilise first)
Place blackberries in heav saucepan with the water. Stew with the lid on for 20-25mins. Every 10mins or so give it a mash to squeeze the juice from the blackberries.
Add the sugar and lemon juice. Keep on heat until the sugar has dissolved (10-15mins).
Once dissolved turn up the heat & boil (with lid on) for 8mins, stirring every few mins. While this is boiling place a large bowl in the oven at 180'C.
Place a sieve lined with gauze over the bowl & pour the mixture through, helping it with a wooden spoon.
Now pour quickly into a jar. Place a wax disc on top & leave to cool. It should start solidifying and forming a jelly in the bowl, if not you may need to heat it further.
