1 pkg. Stuffing Mix, Chicken Flavor
1 can (6 oz) light white tuna in water, drained
1 can (6 oz) chunk white chicken, drained & shredded
1/2 c. carrots, shredded
1/3 c. Light Miracle Whip or Mayonnaise
1 c. Sharp Cheddar Cheese, shredded
2 T. Sweet Relish
3/4 c. water
Mix all ingredients together. Cover and refrigerate for 10 minutes.
Heat a large skillet coated with cooking spray over medium heat. For each tuna cake, shape 1/3 cup light tuna mixture into a patty. When all patties are made add them to skillet in batches and cook for 3 minutes on each side or until golden brown on both sides, turning over carefully.
Substitute: Substitute 1 cup low-moisture, part-skim mozzarella cheese, 1/2 cup chopped green onions and 1 Tbsp. lemon juice for the Cheddar Cheese, carrots and pickle relish.
MY PATTY COOKING TIP: Shape patties as directed; cover them and refrigerate for 1 hour so they will be more firm and won't crack or break during cooking.
